🔴Chicken Chow Mein
Chow mein is a traditional Chinese dish made with egg noodles and stir-fried veggies. We love adding a protein and our favorite is chicken, but you can try different meat or tofu. This dish is pan-fried so the noodles get a nice crisp to them and then tossed in a yummy sauce. Chow mein is perfect for those nights when you don’t want to dirty too many pans or make a big mess of the kitchen.

🔴In American Chinese cuisine, it is a stir-fried dish consisting of noodles, meat (chicken being most common but pork, beef, shrimp or tofu sometimes being substituted), onions and celery. It is often served as a specific dish at westernized Chinese restaurants. Vegetarian or vegan chow mein is also common.

🔶Ingredients🔶
🔹350 g chow mein noodles or dry spaghetti
🔹1 tbsp. sesame oil
🔹450 g boneless skinless chicken thighs, cut into 2.5cm pieces
🔹Salt
🔹Freshly ground black pepper
🔹1 clove garlic, crushed
🔹1 tsp. freshly grated ginger
🔹1 carrot, grated
🔹1/2 head small cabbage, shredded
🔹60 ml low-sodium chicken stock
🔹60 ml low-sodium soy sauce
🔹2 tbsp. oyster sauce
🔹Thinly sliced spring onions, for garnish
🔹Toasted sesame seeds, for garnish

➡️Step 1
Cook chow mein noodles according to package instructions and drain.
➡️Step 2
In a large pan over medium-high heat, heat oil. Season chicken with salt and pepper. Add chicken and cook until golden and crispy, 7 to 8 minutes. Move chicken to one side of pan, and to other side, add garlic, ginger, carrot, and cabbage and cook until tender, 3 minutes.

Meanwhile, make sauce: In a medium bowl, whisk together stock, soy sauce, and oyster sauce.

Pour sauce over pan and add cooked noodles, tossing to combine.

Garnish with spring onions and sesame seeds before serving.
