Vegan Pumpkin Curry - Breakfast and Lunch Food

vegan pumpkin curry is simple and ready in 30 minutes. A great but easy autumnal dinner to comfort you with warm spicy flavours when the days are getting shorter and colder.This vegan pumpkin curry is just that. The prep just involves chopping some onion, garlic and pumpkin (or squash), and the rest comes together practically on its own. Now that’s an autumn meal to our liking!

🔹Chili Pepper - 1.0 pc
🔹Kaffir Lime Leaves - 4.0 sprig
🔹Salt - 0.5 tbsp
🔹Water - 1.0 cup
🔹Coconut Milk - 1.0 cup
🔹Pumpkin - 0.45 Kg(s)
🔹Thai Basil - 3.0 sprig
🔹Vegetarian Red Curry Paste - 1.0 tbsp

#️⃣Directions

🔴STEP 1.
 In a pot, put half of the coconut milk over medium heat. Add red curry paste and mix it well
with coconut milk. Turn down the heat if this mixture starts to splatter too much.

🔴STEP 2
Keep stirring to prevent the bottom from sticking and burning. Wait till the reddish oil starts
to form, stir it to let the oil bring out the flavor and aroma of the spices.

🔴STEP 3. 
Add pumpkin and stir to coat it with curry sauce. Now add the remaining coconut milk and
water. Add salt for seasoning. Taste-test. Each curry paste has different salt content, hence,
you really need to taste it. Simmer until the pumpkin is soft, about 15 minutes.
🔴STEP 4.
 Add the sliced red pepper and kaffir lime leaves. Add Thai basil. Turn off the heat. Keep
stirring to submerge the basil in hot curry to keep the leaves bright green. The leaves will stay
bright green for 10 minutes or so.
🔴STEP 5.
 Serve it! 6.
